Looking for a vegan restaurant in Florence? At Hotel Brunelleschi, you will find a vegan menu in both the Santa Elisabetta gourmet restaurant and the Pagliazza Osteria. Our chef Simone Bertaccini pays particular attention to the creation of dishes that avoid the use of fish and meat, but also milk, dairy products, eggs and egg products, and products that derive from animal products such as honey and gelatin.
The menu includes four courses.
The classic raw vegetables with vinaigrette served as an appetizer become Cruditées of vegetables and fruit, with raspberry vinegar.
The first course is a lighter reinterpretation, containing fewer calories without Parmesan cheese, a timbale of aubergine, tomato and tofu with basil pesto. The tofu is derived from soy milk, obtained from curdling the milk extracted from its seeds.
As a second course: Grilled seitan with courgettes and walnut sauce. Seitan, as with tofu, is a high-protein food derived from wheat gluten, or other cereals.
Finally, a fresh dessert without milk: Pineapple carpaccio and ice cream.
