Enjoy the specialties prepared by the chef Rocco de Santis in combination with the champagne by Maison Perrier-Jouët. This champagne is characterized by a blend based on the structure and depth of the Pinot Noir and Meunier and by a fruity and round style.

The Tower Bar barman is ready to delight you with the champagne Perrier-Jouët but also with other types of cocktails cleverly prepared before your eyes in the precious location of the Tower of Pagliazza, one of the oldest buildings in the city entered in the register of the Florentine historic building.
It seems that the Tower was built by the Byzantines as part of the walls of Florence, when they entered the city during the Gothic War. In the 12th century it began to be used as a women’s prison, that’s why the name “Pagliazza” that derives from the straw bedding for the prisoners.
Today, in the basement of the tower has been set up a small museum which houses also the remains of a Roman calidarium and an ancient collection of Montelupo ceramics.
